You’ve probably heard that sharp knives are much safer to use than dull ones, but why? Simply put, a sharp blade requires less force to cut. This reduces risk of slippage, increasing safety for the user and making blade work more efficient. Sharp knives are also more precise, allowing for cleaner, more accurate cuts and slices. Lastly and maybe most importantly, sharp blades are just more fun to use!
The Flash Method
Japanese water-stone sharpening allows for greater control and precision in the sharpening process, as the sharpener can feel the blade and make micro-adjustments to the angle and pressure as needed. This is not as easy with power tools, which can be more difficult to control and may result in an uneven or poorly sharpened and less durable edge. During removal of blade material, it's important that the appropriate care is taken. This method is also often considered to be more environmentally friendly, not requiring external power or generating excess waste.
